This simple, savory dish brings out the rich flavor of pasture-raised Kunekune pork, perfectly balanced with the sweetness of apples and the warmth of aromatic herbs. Great for a quick weeknight dinner or a cozy meal!
Ingredients:
- 1 lb Kunekune ground pork
- 2 apples (Honeycrisp or Granny Smith), cored and sliced
- 1 small onion, thinly sliced
- 2 cloves garlic, minced
- 1 tsp fresh thyme (or ½ tsp dried)
- ½ tsp cinnamon
- ½ tsp smoked paprika
- Salt and black pepper to taste
- 1 tbsp apple cider vinegar
- 1 tbsp maple syrup (optional)
- 1 tbsp olive oil or butter
Instructions:
- Heat olive oil or butter in a large skillet over medium heat.
- Add Kunekune ground pork, breaking it up as it cooks. Season with salt, pepper, smoked paprika, and thyme. Cook until browned, about 5-7 minutes.
- Add onions and garlic, sautéing until softened and fragrant, about 3 minutes.
- Stir in apple slices, cinnamon, and apple cider vinegar. Cook for another 3-4 minutes until apples are slightly softened but still have some texture.
- Drizzle with maple syrup if using, stir to combine, and cook for 1-2 more minutes.
- Serve warm over mashed sweet potatoes, rice, or alongside roasted vegetables.
