Kunekune Pork & Apple Skillet

This simple, savory dish brings out the rich flavor of pasture-raised Kunekune pork, perfectly balanced with the sweetness of apples and the warmth of aromatic herbs. Great for a quick weeknight dinner or a cozy meal!

Ingredients:

  • 1 lb Kunekune ground pork
  • 2 apples (Honeycrisp or Granny Smith), cored and sliced
  • 1 small onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 tsp fresh thyme (or ½ tsp dried)
  • ½ tsp cinnamon
  • ½ tsp smoked paprika
  • Salt and black pepper to taste
  • 1 tbsp apple cider vinegar
  • 1 tbsp maple syrup (optional)
  • 1 tbsp olive oil or butter

Instructions:

  1. Heat olive oil or butter in a large skillet over medium heat.
  2. Add Kunekune ground pork, breaking it up as it cooks. Season with salt, pepper, smoked paprika, and thyme. Cook until browned, about 5-7 minutes.
  3. Add onions and garlic, sautéing until softened and fragrant, about 3 minutes.
  4. Stir in apple slices, cinnamon, and apple cider vinegar. Cook for another 3-4 minutes until apples are slightly softened but still have some texture.
  5. Drizzle with maple syrup if using, stir to combine, and cook for 1-2 more minutes.
  6. Serve warm over mashed sweet potatoes, rice, or alongside roasted vegetables.
